Ingredients
Pork roast
¼ c olive oil
2 Tbs Dijon mustard
¼ c Amber Agave Nectar
fresh chopped garlic
fresh chopped cilantro
herbs:
basil
rosemary
oregano
paprika
water or dry white wine

Method
- Mix together all ingredients
- Rub over entire roast, concentrate on top
- salt fairly heavily, and pepper
- Place in glass roasting pan in ¼ inch of water or white wine
- Roast slowly at 350 until meat inner temp reaches 170
- remove from oven and let stand 5-10 min. before slicing
