Mango Pineapple-Lime Cheesecake with Ginger Crust
|
Ingredients, crust
1 ½ c. ground ginger snap cookies
1 3-oz jar macademia nuts
¼ c Agave Nectar
1 ½ Tbs ch crystalized ginger
2 Tbs (¼ stick) unsalted butter, melted

Method, crust
- grease spring-form pan
- Mix all dry ingredients in food processor
- Add butter and Agave Nectar. Mix well
- Press into bottom of pan and up sides 1 ¾ inches
- bake 8 min.
- Cool to room temperature

Ingredients, filling
4 8-oz pkg. cream cheese
¾ c Agave Nectar
1 Tbs minced lime peel
2/3 c sour cream
6 Tbs fresh lime juice
4 lg. eggs

Method, filling
- Mix cream cheese, Agave Nectar, lime peel
- Add sour cream, lime juice
- Add eggs, 1 at a time
- Pour filling on crust
- Bake 350º until edges firm, about 1 hr. 20 min.
- Let cool. Cover & chill overnight

Ingredients, topping
1 mango, pitted, peeled, sliced
3 kiwi, sliced, peeled
1 small pineapple, peeled cored, sliced thinly

Method, topping
- Arrange fresh fruit on top of chilled cake
|
