Ingredients

4 eggs
½ c melted butter
1 c flour
1 c milk
1 tsp vanilla
Method

  1. Separate eggs
  2. Beat egg whites until stiff (do not over-beat)
  3. Beat egg yolks in a separate bowl until smooth
  4. To yolks, add flour, milk, butter and vanilla. Beat smooth.
  5. Pour over egg whites and fold together.
  6. Pour entire mixture into lightly greased 12" skillet
  7. Cook over medium heat, break and turn as it begins to brown.
    Continue to break and turn and chop into 1" pieces as it firms.

    Serve with apples sauce and plain yogurt.
    Top with cinnamon and Amber or Dark Agave Nectar
