Ultra-light Waffles
serve with Amber or Dark Agave Nectar
|
Ingredients
4 eggs
½ c melted butter
1 c flour
1 c milk
1 tsp vanilla
|
Method
- Separate eggs
- Beat egg whites until stiff (do not over-beat)
- Beat egg yolks in a separate bowl until smooth
- To yolks, add flour, milk, butter and vanilla. Beat smooth.
- Pour over egg whites and fold together.
- Spoon into waffle iron. Do not overfill.
- Cook until crisp and pale golden brown
Serve with whipped cream or scoop of plain yogurt
Top with fresh berries and Amber or Dark Agave Nectar
