Pecan Pie

Ingredients, crust

1 ½ c. flour
½ c. butter
1 ½ Tbs sugar
½ tsp salt
1 egg yolk
1 Tbs heavy cream
Method, crust
  1. combine flour, butter, sugar, salt
  2. Add egg yok, cream
  3. Add a little water to clump dough
  4. wrap in plastic, chill in fridge

  5. Butter 9 inch spring-form pan
  6. roll chilled pastry to fit bottom and 1 ¼ inch up sides
    return to fridge
Ingredients, filling

3 eggs
1 c. sugar ½ c Agave Nectar
½ c. water
1 Tbs butter, softened
1 c. chopped pecans
1 c. whole pecans
Method, filling
  1. Mix together all ingredients except pecans
  2. Add chopped pecans into mix
  3. Pour into chilled pastry
  4. Arrange whole pecans on top
  5. Bake 350º for 50-60 min
  6. Turn off oven, let sit in oven 10-15 min more
  7. Remove from oven, let cool
